Method

  1. Preheat the oven to 220°C, conventional top-and-bottom heat. Place an empty skillet about 23 cm in diameter in the oven and heat for 10–15 minutes.

  2. Coarsely grate the potatoes and onion. Add the salt, mix and leave for 5 minutes. Transfer to a clean kitchen towel and squeeze very thoroughly. The mixture should be almost dry.

  3. Mix the squeezed potatoes and onion with the egg, flour, Parmesan, pepper and 1 tbsp olive oil.

  4. Carefully remove the hot skillet from the oven. Add the neutral oil or clarified butter and the remaining olive oil, coating the bottom and sides. Add the mixture and shape into an 8–10 mm-thick pancake. Do not press too firmly.

  5. Bake for 20–25 minutes until the edges are deeply golden and the base is crisp. Switch to the grill setting for 2–4 minutes to brown the top. Watch closely: the Parmesan can burn quickly.

  6. Meanwhile, prepare the gzik. Mash the twaróg with a fork, mix with sour cream and finely chopped chives, then season with salt and pepper.

  7. Rest the baked pancake for 2–3 minutes. Loosen the edges and transfer it to a board or wire rack to keep the bottom crisp. Serve with the gzik.

Good to know

  • Choose starchy potatoes and squeeze them very firmly; moisture is the greatest enemy of crispness.

  • Do not cover the baked pancake or leave it for long in the hot pan or on a flat plate. Transfer it to a wire rack or board.

  • If the base is not crisp enough, put the pan over medium heat for another 2–3 minutes.

Storage and reheating

  • Gzik can be prepared ahead and refrigerated. Take it out shortly before serving so it is not very cold.
