Mushroom croquettes & aioli
Small golden croquettes with a creamy mushroom filling, aged Bursztyn cheese and mild confit garlic aioli. Crisp on the outside, soft and intensely mushroomy inside.
Finely chop the onion and grate the mushrooms using the coarse side of a grater.
Heat some oil in a frying pan and sauté the onion first. Add the mushrooms and cook until all the liquid has evaporated and the mixture forms a thick mushroom paste. Season with salt and pepper.
Meanwhile, cut the rolls lengthwise to make four halves. Generously spread each half with butter.
Grate the mozzarella. Spread the mushroom mixture over the rolls, then sprinkle generously with cheese.
Place the zapiekanki in an oven preheated to its highest available temperature. Bake using the conventional top-and-bottom heat setting until the cheese has melted and turned golden brown. Approximate baking time: 10 minutes. At very high temperatures, check earlier and remove when the cheese has melted and browned.
Remove from the oven, drizzle with ketchup, and top with crispy fried onions and finely chopped chives.
